The delicate, vegetal oakiness of Don Julio Reposado is balanced beautifully by the natural sweetness of bell pepper cordial in this showstopping highball.

1.25oz Don Julio Reposado
0.75oz Bell Pepper Cordial*
0.5oz Lime Juice
2oz Ginger Beer

method
Build into a chilled Highball glass and serve.
*Bell Pepper Cordial:
Send the red bell peppers in a juicer until you have 16 oz of fresh juice.
Strain them through a cheesecloth until all sediments have been separated.
Weigh this liquid and add equal amounts of sugar and mix until completely dissolved.
Bottle and keep refrigerated.
Alcohol content: 11.7g per serve.
