Dinosaur Food

Inspired by Palo Santo incense, Dinosaur Food marries the richness of The Singleton 12-year with rhubarb cordial, chocolate, and vanilla.

Ingredients

1.25oz The Singleton 12-year Old

0.25oz White chocolate palo santo*

0.5oz Acidified rhubarb cordial**

3 Dashes of 20% salt solution***

Equipment

1 Shaker

1 Bar spoon

1 Rocks glass

method

  1. Combine ingredients into a shaker.

  2. Stir over ice and strain into a rocks glass. 

* White Chocolate Palo Santo

Add 2 sticks of Palo Santo to 500g White Chocolate syrup. Cook within a sous vide at 60 degrees for 1 hour. Strain, bottle and keep refrigerated.

** Rhubarb Cordial

Chop frehs rhubarb into uniform cubes. When chopped, add into double it’s weight of 1:1 sugar syrup. Cook this within a Sous Vide at 82 degrees for 3 hours. Strain off the liquid and  weigh. Finally, add 3% Malic Acid by weight. Bottle and keep refrigerated.

*** Saline Solution

Add 20% salt to water and bottle. E.g. 20g salt to 80g water.
