Pineapple Mojito
Say aloha to this pineapple pleasure! Captain Morgan White Rum mixed with Sugar Cane Liqueur, Pineapple Purée, fresh Lime and served over ice with a splash of Ginger Beer - are you ready to luau?

Ingredients
1.75oz Captain Morgan White Rum
0.25oz Sugar Cane Liqueur
0.75oz Pineapple Juice
5 Fresh Mint Leaves
0.5oz Lime Juice
1.75oz Ginger Beer
1 Pineapple Wedge (Garnish)
1 Mint Sprig (Garnish)
Equipment
1 Highball Glass
1 Ice Scoop
1 Jigger
1 Muddler
1 Bar Spoon
1 Tongs
method
Shake all the ingredients except the Ginger Beer with ice.
Strain into an ice-filled Highball glass.
Top up with Ginger Beer.
Garnish with a Pineapple and Mint Sprig.
