0.5oz Lime Juice
5 Watermelon Chunks
0.5oz Simple Syrup
3.5oz Sparkling Rosé
1 Watermelon Slice (Garnish)

1 Jigger
1 Carafe glass
1 Bar Spoon
1 Tongs
method
Shake all the ingredients except the Ginger Beer with ice.
Strain into an ice-filled Highball glass.
Top up with Ginger Beer.
Garnish with a Lime wedge.
