Suman
From Canada’s Dear Friend Bar, The Suman is a Fijian food inspired cocktail with banana leaf Ketel One Vodka, coconut rum and a sticky rice cordial.



Serves:
Ingredients
1.5oz Banana Leaf Ketel One Vodka*
0.5ml Coconut Rum*
1.5oz Sticky Rice Cordial*
2 Dashes of saline solution (10:1 water to salt)
1 Soda water to top up
2 Banana leaves to garnish
Equipment
1 Collins glass
1 Shaker tins
1 Strainer
1 Ice scoop
1 Measuring jigger
method
- Pour all ingredients except soda water into a shaker tin. 
- Add ice and shake. 
- Pour soda water into a Collins glass with ice and banana leaf garnish. 
- Strain the cocktail on top and gently stir to combine. 
*Banana Leaf Ketel One Vodka:
- Combine 10g Banana Leaves and 750 ml of vodka and leave overnight. 
**Sticky Rice Cordial
- Add 250g Sticky Rice and 42 oz water into a pot. 
- Bring to a boil and cover. 
- Let simmer for 30 minutes. 
- Strain out rice, add equal weight cane sugar. 
- Add 2.5% Citric Acid to total weight. 
Alcohol content: 19g per serve.
