Zacapa Sunset Serenade
A twist on the fruity piña colada, this rich cocktail with with coconut cream is a tropical holiday in glass. Garnish with cloud top air to elevate.



Serves:
Ingredients
1.5oz Ron Zacapa 23
1oz Fresh pineapple juice
1oz Coconut cream
0.25oz Orange juice
0.25oz Lime juice
1 Pineapple wedge for garnish
Equipment
1 Collins Glass
1 Ice Scoop
1 Jigger
1 Tongs
1 Cocktail Shaker
1 Fine Strainer
method
Add all ingredients to cocktail shaker with ice.
Shake vigorously.
Double strain over ice in a collins glass.
Top with cloud top air.
Garnish with pineapple.
CLOUD TOP AIR
4.5oz Filtered water
4oz Coconut water
2.5 Pineapple juice
2.5oz Lime juice
3g Sucrose ester
3g Salt
METHOD
Combine all ingredients in a round container.
Whisk together using the immersion blender. This will start the foaming process.
Gently scoop out the bubbles out and place them on your drink - a julep strainer works great for this.
