Rum is a really varied category with a vibrant tropical heritage - offering a rich range of flavors and styles, from light white rums excellent for mixing in cocktails, to dark characterful aged rums, perfect for sipping on their own.
Rum can only be produced by sugar cane by-products (either molasses or sugar cane juice), fermented, distilled, and sometimes aged.
While rum can be aged anywhere (in oak or other casks), it can only be distilled in a sugar cane growing country.
Light rums are usually distilled in a continuous still while heavy rums are usually distilled in a pot still.
Appearance, flavors and aromas differ widely from a white rum (neutral and dry) to a golden (tropical fruit and dry to off-dry) or a dark rum (dried fruits, spice, toffee for a sweet spirit).
