Tequila can only be produced in the Tequila region of Mexico and must be at least double-distilled.
It is made from blue agave - cooked then shredded to release its natural sugars' juice, which is fermented and distilled. Tequila can then be aged to different degrees, depending on its style.
While un-aged tequilas can present a distinctive grassy, peppery flavour and aroma, as the liquid ages, it loses some of the distinctive agave flavor and takes on spicy, oak flavors from the casks in which it is rested.
Maturation rules are as follows:
- Blanco tequila: un-aged
- Golden tequila: un-aged and colored.
- Reposado tequila: aged for 2 months minimum
- Añejo tequila: aged for 12 months minimum
