Born and raised in Manila, Lester grew up surrounded by an abundance of exotic fruits and plants. He started his career aged 20, first in a bar, then a member’s club, then a fine dining restaurant, each teaching him something new and opening his eyes to the incredible world of bartending. Learning more about the craft gave him an appreciation for the classics, and he believes that making any great drink boils down to understanding the role of each and every ingredient you put in.
