Western Australia has some exceptional regional honey that work wonders in this cocktail.


60ml Tanqueray London Dry Gin

20ml Lemon juice

15ml Honey syrup*

Garnish: Lemon twist


Shake and served in an ice-cold coupette

Garnish with a lemon twist


*Honey syrup: Add 2/3 cup honey and 1/3 cup water to a small saucepan over medium heat. Stir until blended. Strain into a jar or bottle and seal tightly.
