Baltra

Although Baltra just opened in 2014 it’s such a strong contender that it had to make my list of the top 3 bars in Mexico. Every week they run a special cocktail of the week - it makes going there all the more fun and is the perfect excuse to make a trip to the bar. Not only are the drinks phenomenal but the unique atmosphere gives the place a real edge - every corner is different and you feel like you’re taking a trip around the world. The bartenders’ creativity and flair can’t be questioned. With an endless spirit collection, their back bar display is to be envied. What’s my drink of choice? Well, I would have to go for the Lavandula - it’s one not to miss. Adrián, the head bartender, is a great guy and no matter what you ask for he will find a way of rustling it up for you. His big heart, unique personality and creativity make going to Baltra a very personal and unforgettable experience.

50ml BULLEIT bourbon

25ml Lemon juice

25ml Homemade lavender syrup

10ml Italian bitter liqueur

Method: Add all ingredients in the shaker with ice, shake it and double strain in a collins glass. Garnish with lavender leaves.

Four Seasons Bar

If the Four Seasons’ 21 years in business aren’t enough to convince you to pay it a visit then I don’t know what will! The bar has all the charm of a quintessential London pub. Their bartenders know how to put their own twist on each and every cocktail and if you’re looking for the same drink twice, then you can think again. Their drinks are creations unto themselves and each one you’re served will be sure to create a taste explosion. The location of the Four Seasons is also really unique. There’s an inner courtyard which makes it the perfect spot for alfresco dining or simply relaxing with friends after a hard week at work - its European look gives you that ‘holiday feeling’. With quality service, a warm ambiance and great bartenders the Four Seasons gets five stars from me!
