Luis is dreaming of opening his own bar where he can not only show the world what he can do but demonstrate Colombia’s fantastic culturally rich gastronomic scene. Luis’ signature serve titled ‘Bijao’ incorporates his ancestral origin through the use of the bijao leaf (from the plantain tree) which he vaporizes. A trend that is exciting Luis is the idea of a liquid chef. A bartender moving into the kitchen opens up a world of new possibilities.
