Ryu believes that bartending is much more than just making a nice drink. Bartenders must be an ambassador and mentor, providing a complete experience for their customers. When Ryu is looking for inspiration, he will search the history and tradition of the spirit first and uncover any links with traditional food and culture in its origins. He finds the low alcohol trend interesting, using 20-30ml of the base spirit to deliver a cocktail with all of the character and appeal.
