The Hand in Hand

A recipe from the owners of Black Pearl, this is a recipe of one of their larger format drinks and features a sprightly mix of Belsazar Rose, Ketel One Vodka and strawberry.

This recipe will create 6.5 standard drinks (based on 6 serves).

Ingredients

120ml Ketel One Vodka

210ml Belsazar Rose

90ml Strawberry oleo

90ml verjuice

90ml whey

150ml dilution

Equipment

1 Strainer

1 pan

1 oil filter

1 Spinzall

1 750ml bottle

method

STRAWBERRY OLEO

Ingredients:

  • 250 g strawberry

  • 250 g sugar

Preparation:

  1. Emulsify overnight

  2. Strain

WHEY

Ingredients:

  • 3 litre milk

  • 1.5 tsp citric acid

Preparation:

  1. Bring milk to boil, take of heat and stir in citric

  2. Strain through oil filter

  3. Treat whey like citrus to clarify in spinzall

  4. 2ml sp-l and 2ml kieselsol

  5. 15-minute spin

HAND IN HAND COCKTAIL 

Pour all ingredients into a 750ml bottle. Serves 6.
