Harvest Time Highball

This highball created by Katie Nagar emphasises the 'woodsy' character of Johnnie Walker Black label and is inspired by the autumn aromas of changing leaves.

    Johnnie Walker Black Label

  • 15ml

    Fig laced Oloroso Sherry*

  • 20ml

    Red Pear Syrup**

  • 100ml

    San Pellegrino Sparkling Limone & Tea

    Fresh Fig Slice

    Sprig of Thyme

Method

  • Method
    1. In a highball glass, add Johnnie Walker Black Label, Oloroso sherry and red pear syrup.
    2. Add ice and stir.
    3. Top up with 100ml of San Pellegrino Sparkling Limone & Tea.
    4. Garnish with 1 slice of fresh fig and a sprig of thyme.

    11.49g per serve

     

    METHOD: FIG-LACED OLOROSO SHERRY

    1. Combine 200g of quartered figs with 500ml Oloroso sherry into a vac bag and seal.
    2. Sous vide at 50°C for 45mins.
    3. Place in ice bath for 10mins.
    4. Strain through coffee filter.

    Yield: 500ml

    METHOD: RED PEAR SYRUP

    1. Juice six quartered red pears to yield 600ml.
    2. Immediately combine fresh pear juice into blender with 600g caster sugar, 3g citric acid, and 3g malic acid.
    3. Blitz until mix is fully homogenized.

    Yield: 1L
