A subtle twist on a classic Perfect Lady cocktail - My Perfect Lady keeps the lemon and peach while substituting gin for the complex, generous and full-bodied taste of Ron Zacapa 23 while adding a delicate, fragrant note through the addition of lavender bitters.

Ingredients

50ml RON ZACAPA™ 23 Year Old

10ml Creme de peche

10ml Sugar syrup

20ml Fresh lemon Juice

1 Egg white (or equivalent to 20ml)

1 Dash of lavender bitters

Equipment

1 Shaking tin

1 Strainer

1 Coupette glass

method

  1. Add all ingredients into a shaking tin, dry shake first with no ice, add lots of cubed ice.

  2. Shake hard before double straining into a coupette glass and garnishing with sprigs of dried lavender.
