Pineapple Mojito

Say aloha to this pineapple pleasure! Captain Morgan White Rum mixed with Sugar Cane Liqueur, Pineapple Purée, Fresh Lime and served over Ice with a splash of Ginger Beer - are you ready to luau?

Ingredients

50ml Captain Morgan White Rum

10ml Sugar Cane Liqueur

25ml Pineapple Juice

5 Fresh Mint Leaves

15ml  Lime Juice

50ml Ginger Beer 

1 Pineapple Wedge (Garnish)

1 Mint Sprig (Garnish)

Equipment

1 Highball Glass

1 Ice Scoop

1 Jigger

1 Muddler

1 Bar Spoon

method

  1. Shake all the ingredients except the Ginger Beer with Ice.

  2. Strain into an Ice-filled Highball Glass.

  3. Top up with Ginger Beer.

  4. Garnish with a Pineapple and Mint Sprig.

 The Mojito is arguably the most popular of Cuban cocktails with countless bartenders creating their own twists on this classic recipe.

History of the Drink

Some date this cocktail back to the 1500's and that Sir Francis Drake had something to so with it. It's hard to prove or disprove this, but what we do know is that it has been a global favourite for decades.
