From Canada’s Dear Friend Bar, The Suman is a Fijian food inspired cocktail with banana leaf Ketel One Vodka, coconut rum and a sticky rice cordial.

    Banana Leaf Ketel One Vodka*

  • 15ml

    Coconut Rum

  • 45ml

    Sticky Rice Cordial*

  • 2

    Dashes of saline solution (10:1 water to salt)

  • 1

    Soda water to top up

  • 2

    Banana leaves to garnish

Method

  • METHOD
    1. Pour all ingredients except soda water into a shaker tin.
    2. Add ice and shake.
    3. Pour soda water into a Collins glass with ice and banana leaf garnish.
    4. Strain the cocktail on top and gently stir to combine.

    *Banana Leaf Ketel One Vodka:

    1. Combine 10 g Banana Leaves and 750 ml of vodka and leave overnight.

    **Sticky Rice Cordial

    1. Add 250 g Sticky Rice and 1250 g water into a pot.
    2. Bring to a boil and cover.
    3. Let simmer for 30 minutes.
    4. Strain out rice, add equal weight cane sugar.
    5. Add 2.5% Citric Acid to total weight.

    Alcohol content: 19g per serve.
