Why So Serious
The Why So Serious - a mezcal highball with a difference thanks to some extra zing from fermented watermelon.



Serves:
Ingredients
45ml Sombra Mezcal
15ml Lacto Melon Juice
22.5ml Lime
15ml Strega
7.5ml Oleo
2 Dashes of mole bitters
10 Drops black cardamom tincture
1 Burnt orange wheel and lapsang spritz to garnish
Equipment
1 Collins glass
1 Ice speer
method
1. First, create a batch of lacto fermented watermelon for which you'll need:
1 Watermelon cubed
2% Salt
Cube the watermelon and add 2% of its weight in kosher salt. Vacuum seal and crush the melon and salt mixture into pleasant mush. Ferment for 3-4 days. Blitz in blender and fine strain. Freeze in 1L increments and thaw as needed.
2. Add 15ml of this mixture to the other ingredients in a tin and shake with ice.
3. Add an ice speer to a Collins glass.
4. Add the mix to your glass.
4. Garnish with a burnt orange wheel and lapsang spritz.
