William Wallace
Adapted from a classic Rob Roy cocktail by Manchester bartender Joesph Schofield, the simple William Wallace swaps Vermouth with a flavourful sherry.

50ml Johnnie Walker Gold Label
10ml Asterley Bros. Estate Sweet Vermouth
10ml Pedro Ximenez Sherry
3 dashes Orange bitters
Equipment
1 Coupette glass
1 Mixing glass
1 Stirrer
1 Strainer
method
Stir all ingredients in mixing glass to dilute.
Strain into small coupette.
Garnish with orange coin, no ice.
Alcohol content 20.73g per serve.
