Ingredients

35ml Haig Club

10ml Lemon juice

15ml  Sugar Syrup

10ml Oloroso sherry

40ml Champagne

1 Lemon Zest (Garnish)

Equipment

1 Rocks Glass

1  Ice scoop

1  Jigger

1 Cocktail shaker

1 Hawthorne strainer

1 Muddler

1 Tongs

method

  1. Shake all ingredients except for the Soda and the Bitter over Ice.

  2. Strain into an iced Highball Glass.

  3. Top with a splash of Soda and one dash of Cocktail Bitters.

  4. Garnish with a Maraschino Cherry and an Orange Wedge.
