Ingredients

50ml Ketel One Vodka

25ml Fresh Lemon Juice

15ml Sugar Syrup (2:1 Ratio)

4 Cucumber Slices

8 Mint Leaves

10ml Soda

1 Mint Sprig (Garnish)

Equipment

1 Highball Glass

1 Ice Scoop

1 Jigger

1 Cocktail Shaker

1 Hawthorne Strainer

1  Muddler

1 Tongs

method

  1. Muddle the fresh ingredients in a Cocktail Shaker.

  2. Add the remaining ingredients except the Soda and shake with ice.

  3. Strain into an ice-filled Highball Glass.

  4. Top with soda.

  5. Garnish with a Mint Sprig.

Its origins can be traced back to the Limmer's Inn – a dive bar that was a popular haunt among sporting types during the 19th Century. John Collins, who worked as a bartender at the inn, is credited with creating the cocktail that bears his name. The Limmer's Inn, located on Conduit Street in London was well-known for its gin punch as early as 1814. It’s believed that the Collins cocktail may have evolved from this popular drink of the time.
