  • Method

    Prep Method for Dusk till Dawn:

    1. Add ice to a mixing glass
    2. Pour over 50ml of Zacapa 23 and 25ml of Homemade Salted Caramel Liqueur
    3. Give a quick stir for 10 seconds
    4. Pour into a chilled tall Tulip Glass
    5. Garnish with a spray or orange flower water

    Prep Method for Homemade Salted Caramel Liqueur:

    1. Burn 200g of unsalted butter in a pan. Should take around 7 minutes.
    2. Take off the heat and add 2g of salt, stirring to combine.
    3. Add to a vacuum bag with 700ml of Ketel One Vodka.
    4. Cook sous-vide for 30 minutes at 60 degrees.
    5. Remove from water bath and leave it to freeze.
    6. Separate the liquid from the fat and strain through a coffee filter.
    7. For every 100ml of liquid add 40g of brown caster sugar.
    8. Keep in the fridge in a sealed container or batch straight away with Zacapa 23.
