Broken Land Sour

A twist on a vodka sour with Ketel One Botanicals Peach & Orange Blossom and topped with a prosecco air.

Ingredients

2oz Ketel One Botanical Peach & Orange Blossom

1oz Lemon Juice

1 Cacao Butter Fat Wash

0.5oz Pineapple Weed Gomme Syrup

3 drops of Saline Solution

1 Pineapple Slice

Equipment

1 Coupe Glass

1 Bar Spoon

1 Cocktail Shaker

1 Strainer

method

  1. Add all ingredients to a cocktail shaker with ice. 

  2. Shake vigorously.

  3. Strain into a cold coupe glass.

  4. Top with prosecco air. 

  5. Garnish with pineapple slice. 

Prosecco Air

  • 3.5oz Prosecco 

  • 0.25oz Rich Syrup (2:1) 

  • 1.5oz Verjus

  • 2g Soy Lecithin 

Method

  1. Combine all ingredients in a round container.

  2. Whisk together using an immersion blender until fully combined.

  3. Turn on an aerator and place the air stone into the foaming liquid.

  4. The pumping air will produce more ‘soapy’ air bubbles which can be scooped and placed on top of the drink.

  5. Gently scoop out and place them on your drink - a julep strainer works great for this.
