    Captain Morgan White Rum

    Lime Juice

  • 0.5oz

    Sugar Syrup

  • 0.75

    Soda Water

  • 0.5

    Lime chopped into chunks

    Mint Leaves

    Mint Sprig and 1 Lime Wedge (Garnish)

Method

  • Preparation
    1. In a Highball glass, add Lime chunks and Sugar syrup.
    2. Muddle together to extract the juice and opals from the lime.
    3. Fill the glass three-quarters of the way with crushed ice and add the Rum.
    4. Use the bar spoon to churn everything together, moving the Lime chunks around the drink.
    5. Add a cap of crushed ice, and a splash of Soda Water.
