Dinosaur Food

Inspired by Palo Santo incense, Dinosaur Food marries the richness of The Singleton 12-year with rhubarb cordial, chocolate and vanilla.

Dinosaur Food cocktail.


  • 40ml

    The Singleton 12-year Old

  • 10ml

    White chocolate palo santo*

  • 20ml

    Acidified rhubarb cordial**

  • 3

    Dashes of 20% salt solution

0 units of alcohol per serve




    Stir over ice and Strain

    * White Chocolate Palo Santo

    Add 2 sticks of Palo Santo to 500g White Chocolate syrup. Cook within a sous vide at 60 degrees for 1 hour. Strain, bottle and keep refrigerated.

    ** Rhubarb Cordial

    Chop frehs rhubarb into uniform cubes. When chopped, add into double it’s weight of 1:1 sugar syrup. Cook this within a Sous Vide at 82 degrees for 3 hours. Strain off the liquid and  weigh. Finally, add 3% Malic Acid by weight. Bottle and keep refrigerated.

    *** Saline Solution

    Add 20% salt to water and bottle. E.g. 20g salt to 80g water.  

    Alcohol content: 11.7g per serve.
