Heritage Infusion

For Heritage Infusion, a combination of sweet potato and mopane worm, with Don Julio Blanco, jalapenos, orange bitters, lime juice and a simple sugar syrup.

Lucinda's Heritage Infusion cocktail.


  • 60ml

    Don Julio Blanco

  • 30ml

    Orange sweet potato emulsion*

  • 25ml

    Cane brown sugar simple syrup

  • 20ml

    Fresh lime juice

  • 1

    Jalapeno pepper slice

  • 3

    Drops of orange bitters

  • 1

    Tonic water top up

  • 1

    Salted dehydrated sweet potato peel powder

  • 1

    Dehydrated Mopane worm

    Sweet potato emulsion recipe:

    1. Roast 2 cups of sweet potatoes at 190 Degrees Celsius for 30 to 40 minutes or until soft.
    2. Mash the potatoes into a puree in a cheesecloth and strain.
    3. Measure a spoonful of the emulsion to give texture and body to the cocktail.

    Cocktail Preparation:

    1. In a shaker, add ice and all the ingredients together.
    2. Shake for 15 seconds.
    3. Rim your glass with crushed salt and dried sweet potato peel.
    4. Pour and strain over finely crushed ice in a short margarita glass.
    5. Top with tonic water.
    6. Garnish with dried mopane worm.
